Last week Luke Voit voluntarily pushed his opt out date back one week with the Milwaukee Brewers. Voit had expressed on numerous occasions that he wanted to be in Milwaukee and his decision seemed like an opportunity for the Brewers to configure some moves in order to add him to the 40-man roster.
It seems like Milwaukee was clearing space for Voit after they announced that Keston Hiura would not break camp with the team. However, the latest news around camp is that as a procedural matter he has opted out of his deal with the Brew Crew.
Luke Voit has opted out of his contract with the Milwaukee Brewers, but could still be on the opening day roster.
As a procedural matter, Luke Voit did opt out of his Minor League deal with the Brewers, per Craig Counsell. That does not necessarily close the door on him being part of the Brewers’ Opening Day roster. But Voit can look around at his options.

Despite Luke Voit opting out, Curt Hogg has highlighted that he may still wind up on the Milwaukee Brewers opening day roster.
See below from @CyrtHogg, super helpful for understanding Luke Voit’s status. He may well end up on the Brewers’ Opening Day roster. If you like him and want him on the team, don’t panic-Tweet or rage-Tweet or whatever else-Tweet just yet. https://t.co/EBsznBDz8W

To summarize, Luke Voit can currently explore other opportunities outside of Milwaukee. However, with his opt out day being Friday, the Brewers still have a 48-72 hour window to add him to the 40-man roster or release him. If another team has a roster spot for him, the Brewers can match a roster assignment during this window.
This entire situation surrounding Luke Voit is quite puzzling and it is continuing to drag on, but we should officially know his fate by sometime on Sunday.
